Composed Farro and Corn Salad

List of Ingredients
1 C farro
3 T olive oil
1 1/2 C fresh corn kernals (3 ears)
1 C cherry tomatoes, halved
3 scallions, sliced
1 bunch arugula, chopped
1 tsp lemon zest
juice of 1 lemon
Recipe
Cook farro, drain and rinse. In a large bowl toss with 2 T olive oil.
Heat 1 T oil on medium high. Add corn and cook until it just chars. (2 min). Set aside.
Add tomatoes and scallions to pan, to wilt, (2 min). Season with salt and pepper. Add to farro. Add arugula, lemon zest and juice. Toss.
