    1/4 C olive oil + 2 tsp
    2 lbs garbanzos, cooked
    4 stalks celery, finely chopped
    1/4 red onion, minced
    1-3 lemons, juiced
    2 C parsley, chopped
    2 tsp ground cumin

    Recipe



    In a heavy skillet, heat the 2 tablespoon olive oil over medium heat. Add garbanzos and cook and stir until crisp (15 minutes). Cool.
    In a bowl, combine beans and celery. Mix.
    Fold in parsley. Add the quarter cup olive oil and cumin. Toss to coat. Season to taste with salt and pepper. Chill, covered for 24 hours. Add lemon juice and stir before serving. Top with feta cheese if desired.

    Drained, canned beans may be used if desired.
