    Composed-Green Potato Salad

    List of Ingredients

    1 pound new potatoes
    1/3 C finely chopped onion
    1/3 C vinegar
    2 T olive oil
    1 T minced parsley
    2 T minced olives
    salt

    Recipe

    Boil potatoes, and while they are cooking, soak the onion in the vinegar. Peel and slice the potatoes and mix with the onion, vinegar blend, and remaining ingredients. Serve on lettuce if desired.
