Composed Melon with Lentil Salad

List of Ingredients
- 1 C lentils
- 3 C water
- 1 tsp salt
- 2 T oil
- 1/4 tsp minced garlic
- 2 tsp crushed, dried mint
- 1 T chopped parsley
- 2-3 scallions, chopped
- 3 small, fragrant melons
Instructions
- Cook lentils for 1/2 hour, or until tender but not mushy. Remove from heat and add salt. Let set for 10 minutes.
- Mix remaining ingredients and gently toss with lentils. Chill.
- Serve in half melons, scooped out.
