    Composed Melon with Lentil Salad

    List of Ingredients


    • 1 C lentils
    • 3 C water
    • 1 tsp salt
    • 2 T oil
    • 1/4 tsp minced garlic
    • 2 tsp crushed, dried mint
    • 1 T chopped parsley
    • 2-3 scallions, chopped
    • 3 small, fragrant melons


    Instructions


    1. Cook lentils for 1/2 hour, or until tender but not mushy. Remove from heat and add salt. Let set for 10 minutes.

    2. Mix remaining ingredients and gently toss with lentils. Chill.

    3. Serve in half melons, scooped out.
