    Composed Ricotta, pasta salad

    List of Ingredients

    8 ounces, uncooked penne pasta
    3 t olive oil
    1 clove garlic, pressed
    2 C chopped red bell peppers
    1/2 tsp basil
    1/2 tsp tarragon
    1 C ricotta cheese
    salt to taste
    pepper to taste

    Recipe

    Cook the penne according to package directions. In the olive oil, saute the garlic, and briefly sautee the bell pepper until firm, tender. Remove from stove and chill immediately.
    Toss all and serve chilled.
