Composed Shrimp Salad

List of Ingredients
salad greens enough for 2 servings
1/2 C bok choy
3 scallions, thinly sliced
1 stalk celery, sliced
1/4 bell pepper,chopped
1 C cooked baby artichokes,quartered
2 C small shrimp
2 boiled eggs, sliced
1/2 C mayonnaise
1 T olive oil
1 T hot mustard
1 tsp lemon juice
1 tsp sweet pickle relish
2 T ketchup
4 shakes red pepper flake
salt and pepper to taste
Recipe
Place greens on 2 plates, add grated carrots and cabbage if desired. Sprinkle the bok choy, scallions, celery and artichokes over. Add the shrimp, mostley to the center of plates and top with sliced eggs. Combine the remaining ingredients to make a salad dressing and pour over salads.
