    Composed Sweet Potato Salad

    Recipe Introduction

    Preheat oven to 400 degrees F.

    List of Ingredients

    4 small sweet potatoes
    1/4 C mayonnaise
    1 T mustard
    4 celery stalks, sliced 1/4 inch thick
    1 small red bell pepper, cut in 1/4 inch dice
    1 C diced fresh pineapple
    2 scallions, finely chopped
    salt
    pepper
    1/2 C coarsely chopped, toasted pecans
    chopped fresh chives


    Recipe

    Wrap each sweet potato in foil and bake 1 hour. Unwrap and let cool. Peel and cut into 3/4 inch chunks.
    In a large mixing bowl, mix, mayonnaise and mustard. Add sweet potatoes, celery, red peppers, pineapple and scallions. Toss gently. Season to taste with salt and pepper. Cover and chill about 1 hour. Fold in pecans and sprinkle with chives.
