List of Ingredients
1 C bulger, soaked in 2 C hot water.
2 T dried tarragon
1 large carrot, grated
1 large cucumber, seeded and chopped
3-4 Roma tomatoes, chopped
1 bunch scallion, minced
1 bunch Italian flat leaf parsley
1 tsp salt
3-oz lemon juice
1/4 C olive oilRecipe
Cool the bulger in the fridge. Then squeeze out liquid.
Pulse the flat leaf parsley in a food processor with the salt, lemon juice and olive oil
Prep the vegetables, grate, chop, dice etc.... and place in a large bowl. Add the remaining ingredients. Chill before serving as is or on Romain lettuce leaves. Garnish with diced red bell pepper if desired.
