Composed Texas Barley Salad

List of Ingredients
1 C pearl barley, raw
3 C chicken or vegetable broth
1/3 C vegetable oil
2 T white vinegar
2 cloves garlic, minced
1-2 tsp ground cumin
1/2 tsp chili powder
3 green onions, thinly sliced
2 tomatoes chopped
1 1/2 C canned corn, drained
1/3 C finely chopped fresh parsley
Recipe
Bring barley and broth to a boil. Cover and simmer until barley is tender but firm to the bite, about 25 minutes. Stir occasionally.
Drain and cool.
Whisk together the oil, vinegar, garlic, cumin and chili powder. Add green onions, tomatoes and corn. Fold in barley and parsley.
