    Simple Watercress Salad 2

    List of Ingredients

    Watercress, large bunch
    2 heads Belgian endive
    1/2 pound carrots,julienned
    1 minced fresh tomato
    Dressing:

    Extra virgin olive oil 1/4 cup
    Fresh lemon juice 2/3 cup
    1/2 tsp capers, minced
    1 T minced garlic-dill pickle
    2 tsp minced parsley
    minced scallion if desired
    Sea salt 1/2 teaspoon
    Fresh black pepper, a pinch

    Recipe

    Wash watercress and trim stems. Wash endive and separate leaves. Stack the endive and slice thinly. Combine carrots and tomato with endive. Place endive on salad plates and top with watercress. Combine the dressing ingredients and whisk.
    Just before serving pour the dressing over salad.
