Composed Wilted Lettuce and sausage dressing

Cut up 1 head of iceberg lettuce in bite size pieces. Saute 8-10 pork sausages, 12-15 minutes over low heat. Drain and reserve 8 tablespoons fat.Mix this with 2 tablespoons lemon juice. Add 1/2 teaspoon salt and 2 tablespoons sugar.
Put lettuce in a bowl. Cut up the sausages into 1 inch pieces. Pour all the hot dressing over and toss.
Serve with pickled beets and sliced tomatoes on the side.
