    Pita, Rockin' Moroccan

    Recipe Introduction

    SERVES 6

    List of Ingredients

    1 T ground cumin
    1 tsp chili powder
    1 pound chicken breast, cut in 1/4 inch cubes
    4 t olive oil
    1/4 C lemon juice
    2 (16 oz) cans Bush's garbanzo beans, rinsed and drained
    3 green onions, thinly sliced
    1 red bell pepper, diced
    1/4 C chopped parsley
    6 pita pockets
    Plain yogurt, (or sour cream) For garnish

    Recipe

    Combine cumin and chili powder in a plastic bag. Add chicken and shake to coat. Heat 1 tablespoon oil in large skillet over medium heat. add chicken, cook 5 minutes or until no longer pink, stirring frequently. remove from heat and set aside to cool.
    Combine remaining ingredients except pita pockets, mixing well.
    Cut top off pita, (or cut in half for 2 pockets) and open. Fill with chicken mixture. top with yogurt if desired. Season with salt and pepper if desired.
