Yields 4-6 cups.
List of Ingredients
- 2 (15.5 oz) cans blackeye peas
- 3 tomatoes, in 1/4 inch dice
- 2 mangos, in 1/4 inch dice
- 3 green onions, sliced 1/4 inch
- 1/2 C vegetable oil
- 1/4 C white vinegar
- juice of 1 lime
- 2 tsp ground cumin
- 1 tsp garlic powder
- salt and pepper to taste
Instructions
- Combine all in a large mixing bowl.
- Chill four hours.Serve with grilled fish, fowl or meat.
