    List of Ingredients




    2 C sliced onions
    3 T butter
    3 T flour
    1 C Milk, chicken or veal stock
    1/2 C cream
    salt and pepper to taste

    Recipe



    Scald onions by letting them stand in boiling water for 5 minutes, drain.
    Melt butter over low heat, add onions. Cover and simmer about 10 minutes or util soft but not browned. Add flour and stir until well blended. Remove from heat.
    Gradually stir in milk or stock and return to heat. Cook, stirring constantly, until thick and smooth.
    Cook in top of a double boiler over hot water 20-30 minutes. Force through a coarse sieve, add cream and reheat. Season to taste.
    Makes about 1 1/2 cups.
