    Angel food jelly roll cake

    5/8 C egg whites
    5/8 c sugar
    1/2 C cake flour, sifted 3 times
    1/2 tsp cream of tartar
    1/4 tsp vanilla extract

    Recipe



    Beat egg whites stiff, gradually fold in rest of ingredients. Bake in shallow pan. 350 degrees F. for 15-20 minutes.
    Spread with lemon filling and roll up jelly roll fashion.
    Lemon filling:
    3/4 C sugar
    4 T cake flour
    pinch of salt
    Mix and add;
    1/2 C water
    1 well beaten egg
    2 tsp butter
    Cook in double boiler until smooth. After removing from fire add 1/4 C lemon juice and 1/2 tsp grated lemon rind. Cool before spreading.
    Var; use lemon curd.
