    Recipe Introduction


    The french beans refered to in the recipe are not julienned green beans. French beans are a broader version of green bean. You can of course use regular green beans.


    List of Ingredients


    • 1 pound mealy potatoes
    • 1/4 C milk
    • 6 T butter, divided
    • 1/2 pound onions, very thinly sliced
    • 4-6 ounces bacon, crumbled
    • sliced beetroot, cooked
    • cooked french beans


    Instructions


    1. Peel potatoes and cut into fingers. Boil in unsalted water until tender. Mash with the milk, 1 ounce butter and salt and pepper to taste.
    2. Slice onions very thin and saute in 2 ounces butter. Fry the bacon crisp and crumble. Mix onion, bacon and potatoes.
    3. Garnish with beetroot and beans.
