Recipe Introduction
The french beans refered to in the recipe are not julienned green beans. French beans are a broader version of green bean. You can of course use regular green beans.
List of Ingredients
- 1 pound mealy potatoes
- 1/4 C milk
- 6 T butter, divided
- 1/2 pound onions, very thinly sliced
- 4-6 ounces bacon, crumbled
- sliced beetroot, cooked
- cooked french beans
Instructions
- Peel potatoes and cut into fingers. Boil in unsalted water until tender. Mash with the milk, 1 ounce butter and salt and pepper to taste.
- Slice onions very thin and saute in 2 ounces butter. Fry the bacon crisp and crumble. Mix onion, bacon and potatoes.
- Garnish with beetroot and beans.
