Breast of mutton with dill

Place a breast of mutton in boiling water in a large pan, with a tablespoon of salt and 2-3 stalks of dill. Allow it to simmer gently until tender, then take up the meat, cut into neat pieces and serve with the following sauce. Melt a tablespoon of fat. in a saucepan and stir in 2 tablespoons of flour, then Gradually add a pint of the liquid in which the meat was cooked. Flavour with 2 teaspoon of sugar one and one half tablespoons vinegar and 2 tablespoons chopped dill. Lastly stir in one egg yolk and hand with the meat.
