Take 10 pounds of cherries, remove the stems and wash, but leave whole. Place the fruit in a stone crock in alternate layers with five pounds of sugar. Put a lid or a plate over the top and seal it down with a paste of flour and water to make it quite airtight. Now place the crock in a large saucepan of water and let it cook for 6 hours, counting from the time when the water comes to the boil. At once when the cooking is finished, strain the juice from the fruit, bottle and seal down. the cherries can be dried and used for sweet soups.
