Bitter almonds contain cyanide and must be processed before consumption. They can be purchased already processed.
List of Ingredients
2 qts raw milk
1 pint rich milk or cream
2 eggs
1/2 C sugar
salt
5 bitter almonds, blanched
25 almonds, blanched
10 cardamom
2 tsp cinnamon
Recipe
Beat together raw milk, cream, eggs and sugar. Chop almonds and add with the rest of ingredients. Test by pouring a few teaspoons into a small saucepan and heat over a slow fire, but do not let it boil. If the milk becomes too stiff dilute with whole milk, and if too thin add more raw milk or a beaten egg. Turn entire mixture into a crock with a cover, set in a water bath deep enough so that the water reaches higher than the milk in the crock. Cook slowly until thickened or set throughout. Avoid too long cooking as the milk may separate. Chill thoroughly. Slice and serve with a filling of raspberry or currant jelly between layers. garnish with whipped cream and jelly or with cinnamon sauce.
Sauce;
Bring 1 cup water, 2 Tbs. butter, 1/2 cup brown sugar and 1 tsp. cinnamon to boil in a small saucepan over medium heat. Dissolve cornstarch in 2 teaspoons water, whisk into hot syrup for a smooth sauce. Cover, keep warm.
