Dill Sauce

Melt a tablespoon of fat in a saucepan, add 2 tablespoons flour, and cook for a few minutes. Stir in a pint of meat stock (if the sauce is to be served with fish, use fish stock) and boil for 10 minutes. Add 2 tablespoons chopped dill weed, season with salt and pepper, a little sugar and some vinegar. Lastly stir in 1 egg yolk and do not allow the sauce to boil again.
