Drawn Peas

Select young peas whose pods are only just beginning to fill. Wash them well and put them whole, without shelling, in a saucepan with boiling salted water and cook gently until they are quite soft. Drain well and put in a hot dish. Give each person an eggcup with a little melted butter. The peas are picked up by their stalks, dipped in the butter and then drawn between the teeth. If they are properly cooked, both the peas themselves and the coating of the pods will come away in one movement, leaving only the strings and transparent walls of the pod to be discarded. Pea pods have a flavour even better than the peas themselves and this method of eating your peas avoids wasting all the goodness that is usually thrown away with the pods.
