5 eggs, separated
1 C rich milk
salt
pepper
3 T butter
4 T flour
Recipe
Make a cream sauce with butter, flour and milk. Cool slightly and add 1 egg yolk at a time, beating well after each addition. Fold in the stiffly beaten egg whites. Grease a tube pan with butter, sprinkle the sides and bottom with fine bread crumbs, then pour egg mixture carefully into pan. Place pan in a dish of warm water and bake 20 minutes at 350 degrees. Invert pan on a platter and fill center with creamed chicken, shrimp or other filling, as desired.
