Flour dumplings

Melt 2 ounces of butter in s saucepan, and stir in 3 ounces of flour. Gradually add a little over 1 cup water, and stir briskly over the fire until the mixture comes away from the sides of the pan. Remove the pan from the fire and work the mixture for 5 minutes or so with a spoon. When it has cooled somewhat add 1 egg, and after stirring for a few minutes more, add another. Lastly, season with salt and a sprinkling of sugar. Drop by teasponfuls into boiling weak broth and poach until dumplings rise to the surface.
