Danish birthday cake
List of Ingredients
2 cakes compressed yeast
1 C milk, scalded and cooled
3/4 C sugar
1/2 tsp salt
3 1/2 -4 C cake flour
2 eggs, beaten
1/3 C soft butter
1/2 C chopped almonds
1/2 C mixed fruit peelRecipe
Dissolve yeast in a little lukewarm milk. Sift the sugar and salt with the flour and blend with the cooled milk, yeast and eggs.Mix thoroughly and let rise until light. Roll on floured board into a rectangle 6x12 inches. Spread with butter, almonds and fruit peel. Fold each side to the middle and shape into a circle. Place on greased baking sheet and let rise again. Brush with beaten egg, sprinkle with sugar and nuts and bake about 45 minutes at 350 degrees F. (this cake is traditionally baked in a wreath or circle, symbolizing immortality)
