Fried Herring

Wash and soak half a dozen herrings. Split them along the back bone and clean out.Soak a cupful of dry breadcrumbs in half a cupful of milk, add a dessert spoon of anchovie paste, pepper and salt. to taste. Mix all these ingredients well together and stuff into the herrings. Roll the fish in fine oatmeal, place in a frying pan with 3 tablespoons fat and fry either on top of the stove or in an oven for half an hour. Serve with currant jelly.
