Gooseberry Juice

Take ten pounds of green gooseberries, top and tail them and put them in a stone crock. Bring 5 pints of water to a boil and pour over berries. Put a cloth and a lid on the crock. Next day strain off the juice, bring it to the boil again and pour back onto the berries. Repeat this again next day. On the fourth day weigh the juice and then boil it with half the quantity of sugar until all the scum has risen to the surface and been removed and the juice turns a pretty red colour. Bottle and seal the corks.
