Herring Salad

Bone and flake three soused herrings. Cut into dice a cupful each of cold cooked potatoes and beetroot, one small pickled gherkin and a peeled raw apple. Mix all these ingredients well and season with 3 tablespoon of vinegar, a little sugar, pepper and salt. Pile on a dish in pyramid form and decorate with slices of hardboiled eggs and beetroot. Serve with salad dressing.
