Horseradish Sauce

Soak a horseradish in water for a couple of hours, then scrape and grate. Make a sauce with a tablespoon of fat, 2 tablespoons of flour and a pint of milk, or meat stock. Boil for 10 minutes, season and lastly, add 4 tablespoons of the grated horseradish. Do not boil at this point or the horseradish will become bitter.
