1pkg yeast
1 C warm water
1 tsp salt
4 T soft butter
1 1/2 C rye flour
1 1/2 C unbleached hard wheat flour

Dough:
Dissolve the yeast in the water. Add salt and butter. Add flours slowly. Combine well, to a stiff dough. Knead on a lightly floured board until smooth. Cover, let rise to double. Pat out to a half inch thick oval 12x10 inches. Rub surface with flour to dry it.
Fill with small fish such as perch (1 1/2 pounds) in 2 layers with bacon (1/2 pound) between and on top. Fold the dough up over the top and seal with butter and water. Place it in a casserole dish, well buttered, and top with a lid. Add up to 2 tablespoons water to the dish. Bake at 300 degrees F. for 1 hour. Brush with melted butter and bake 2 hours more. wrap in aluminum foil and bake in casserole 1 hour more without the lid. Cool, wrapped in the foil to soften the crust. Slice crosswise and serve.
