3 pounds veal cutlets
3 T butter
1 C breadcrumbs
1 C sweet cream
salt
pepper
Minced parsley
minced onion
Recipe
Wipe meat with damp cloth, pound and season. Mix bread crumbs, butter, parsley and onion. Place a small amount on each piece of meat. Roll and tie with a string. Brown in butter, then add cream and simmer for 1 1/2-2 hours. When done remove rolls. Thicken liquid in pan for gravy, add more water if necessary. Season to taste. Reheat rolls in gravy.
