    Poach 2 pair of kippers gently in water until the flesh comes away easily from the skin and bones. Drain and take away the bones. Flake the fish and let it cool.
    Boil 2 eggs hard and mash up with a fork. Chop a handful of parsley and some chives, and carefully mix this with the flaked kipper and eggs. Serve with salad dressing and lettuce.
