Liver Pudding

Take half a pound of ox or pig's liver, which is generally too tough to cook well by more usual methods. Fry it gently until done right through and then mince up together with a quarter pound of fried bacon. Steam a cupful of rice in 2 cups water and when done mix with the minced liver, 2 tablespoons treacle [or golden syrup], and a small cupful of sultanas or stoneless raisins. Flavour with salt and pepper and then pour the mixture into a greased pie dish. Sprinkle the top with bread crumbs, dot with butter and bake in a moderate oven [350 degrees F.] for 45 minutes.
