saffron buns made in any number of figures: cats, "s" shapes, or figure eights.
List of Ingredients
* 1 teaspoon saffron threads
* 1 C milk
* 1 cake compressed yeast
* 1/4 C lukewarm water
* 1 tsp sugar
* 1/2 C butter
* 4 cups sifted flour
* 1 teaspoon salt
* 1/2 cup sugar
* 3 egg yolks
* 1/2 C raisins
* 1/4 C chopped almonds
* 1 beaten egg white for egg wash
Recipe
Dissolve yeast in lukewarm water and add the tsp sugar.
Using a mortar and pestle, pound saffron threads to break down strands.
In a small saucepan, scald milk. Add the 1/2 cup sugar, salt, butter and saffron.
Let cool to lukewarm. Add 1 cup flour, eggs and yeast and beat thoroughly.
Add rest of flour and raisins. Knead to a smooth dough.
Place in greased bowl. Cover and set in a warm place to rise until doubled.
Pinch off pieces of dough with buttered hands and form into ropes. Using the hands, roll each small piece into a strip anywhere from 2 inch lengths to 8 inches long. Shape each strip into a backwards 'S' place one on top of another, crosswise (or figure 8s). Place on lightly buttered cookie sheets.
Cover with clean cloth and let rise again until double in bulk, about 1 to 1 1/2 hours.
Preheat oven to 375°F.
When dough has risen, brush lightly with egg white. Bake in preheated 375° F oven for 15 minutes, or until lightly browned. Let cool on wire rack.
