2/3 C butter
1/2 C sugar
1 egg yolk
1 1/2 C flour
1/4 tsp almond extract
1/2 C blanched almonds, gratedRecipe
Cream butter and sugar thoroughly. add rest of ingredients, mixing well. Chill. Butter Sandbakkels tins and press small pieces of dough (about 1 tablespoon) into tins. Bake about 10 minutes at 325 degrees F. Cool in tins, then unmold. Handle carefully as they break easily. Serve plain or filled with preserves and whipped cream.
