Put half a cup of dry breadcrumbs in a bowl and pour over them three cupfuls of milk into which two eggs, have been whisked. Leave to stand for a quarter of an hour. Peel and chop a small onion and fry golden brown. Mix this with the crumbs and milk. Now add a pound of raw minced beef and three ounces minced raw bacon. season with a spoonful of salt and a half teaspoon of pepper and then work the mixture with a wooden spoon until it becomes quite smooth and holds together. Shape into small balls and fry in hot fat until browned all over. Pour a cupful of boiling water into the pan and let them simmer under a lid for fifteen minutes.
If there are any left they can be sprinkled with a little vinegar and served cold with salad the next day.
