Recipe Introduction
Sweet soups are very common in Scandinavia and are often served at the end of the meal instead of a pudding. The following one combines cereal with fruit.
Take half a small teacup [2 1/2 oz] of ordinary porridge oats and boil in a pint and a half of water with the lid on the pan until quite soft, i.e., about an hour. Stew a dozen prunes or a small cupful of raisins until soft. Rub the boiled oats through a sieve and add to a pint of boiling milk. When the soup comes to the boil again, stir in the prunes, or raisins with their juice, add sugar to taste and serve hot.
