Pear Cake

Peel, core,and cut into half 2 quarts of pears. Make a simple syrup of 1 cup sugar and 2 cups water. Put the halved pears into this and stew gently until they are tender. Place the pears at the bottom of a pie dish. Bring a pint of milk to the boil and stir in 3 ounces of flour, mixed with a little of the milk. Boil gently for 10 minutes, then set aside to cool. Add 3 ounces of cold butter before the mixture is quite cool, and then stir in one by one, 4 egg yolks and 3 ounces of sugar, together with the grated rind of 1 lemon. Lastly, fold in the stiffly beaten egg whites. Pour this mixture over the pears, put the dish in a warm oven and bake for 45 minutes. Serve warm but not hot.
