    Peel and boil 2 pints of potatoes. Mash up well and set aside to cool. Add a teaspoon of salt, 2 ounces of flour and and egg. Work this dough on a board, adding another ounce of flour if necessary and shape into rounded dumplings. Peel, chop and fry a small onion, and also fry half a pound of bacon. Make a hole in the center of each potato dunpling, put in a teaspoonful of bacon mixture and close the hole again by pinching with your fingers. Drop the cakes into a saucepan of boiling water and let cook until they float up to the surface. This will take about 10 minutes. serve with gravy or a little melted butter.
