    Potato and Bacon Omelette

    Take 1 large potato and one egg per person. Cut the potato into slices. Allow half a rasher of bacon per person. Cut these also into pieces and fry. In the bacon fat, fry a small onion. Now grease an omelette pan, and put in layers of potato, onion and bacon. Take 2 tablespoons of milk for each person, mix this with the eggs and pour into the pan. Put over the fire and shake gently from time to time until the egg mixture has set. Turn out on to a hot plate and sprinkle some parsley over the top.
