Potatoes in Parsley Sauce

Boil 2 pints of potatoes in their skins, peel, cut in slices or dice and put in a hot dish. Melt 2 tablespoons fat in a saucepan , mix in 2 tablespoons of flour and gradually add three quarters of a pint of milk. Let the sauce simmer gently for ten minutes, then add 1 tablespoon of chopped parsley, salt and pepper and pour over the potatoes.
