Roast beef in wine

Take a good joint of beef and lard it with strips of bacon, using a larding needle. Heat some fat in a thick roasting pan, brown the joint well on all sides, then sprinkle with salt and pour in a pint and a half of stock and a cupful of madeira or malaga wine. Simmer gently for 2-3 hours and serve with the gravy from the pot.
