    2 C salmon, flaked
    3 eggs, separated
    1/2 C diced celery
    1/4 C butter, melted
    1 T lemon juice
    salt
    pepper
    1/2 C bread crumbs

    Recipe



    Combine all but the egg whites and crumbs, and mix thoroughly. Stiffly beat the whites and fold in. Pour into a buttered mold and cover with bread crumbs. Set in a pan of hot water and in moderate oven until browned, about 1/2 hour. Unmold, garnish with parsley. Serve with melted butter or a fish sauce.
