This is really a variety of rice pudding. in Scandinavia it goes under the name of porridge. Boil a cupful of rice in a pint and a half of milk to the consistency of thick porridge. Grease a pie dish and put a layer of rice at the bottom. Sprinkle with cinnamon and sugar and put a few dabs of butter here and there. continue with alternate layers of rice and spices, 7 layers is traditional, making the last layer cinnamon and sugar. Put the dish in a warm oven and bake until the top is golden brown.
