Spiced Tongue

Clean tongue well and boil for 2 hours in salted water. remove skin and fibrous parts. Combine 2 cups brown sugar, 1 1/2 cups vinegar, 1/4 C sultanas, 1/2 teaspoon whole peppercorns, 1/2 teaspoon allspice and 1/2 teaspoon mace. Put on to boil in fresh water and add tongue. Simmer 1 hour. Cool. Serve in thin slices.
