Sprat Pie

Wash the sprats, split them open and remove the backbone. Grease a pie dish and cover the bottom with a layer of thinly sliced raw potato. Follow with a layer of sprats, backs upwards, sprinkle with salt and pepper, then put another layer of potato, more sprats, and so on until the dish is full, finishing with potato. Mix 1 cup milk with 2 eggs and pour this over. Scatter some crumbs on top, and bake in a moderate oven for 1 hour.
