Stewed Spinach

Take one pound of spinach, wash and place in a saucepan without water. Put on the lid and cook gently until the spinach is done, taking care that it does not burn. Drain and chop finely. Mix 2 tablespoons of flour thoroughly with the chopped spinach, then melt 2 dessertspoons of butter in a pan and add the spinach and flour mixture, stirring all the time. Add a breakfast cup of hot stock or milk, a teaspoon of sugar and one of salt and continue cooking gently for 10 minutes. Serve with slices of hard boiled egg.
