Stewed White Cabbage

Cut a firm white head of cabbage into quarters and soak in water to which a little vinegar has been added for half an hour. Drain and chop finely, drop into boiling water and cook until almost done. Prepare a sauce with a tablespoon of fat, 2 tablespoons of flour and some of the boiling cabbage water. Season to taste. Drain the cabbage and add to the sauce and simmer until it is quite tender.
Cauliflower; Cauliflower can be served in this manner. Omit the soak in vinegar. Break into small sections and boil until tender. Drain and serve in white sauce made with water from the cooking of the cauliflower. Season with salt and pepper.
