Recipe Introduction
This is served with fruit juices, much like snacks served with tea in England.
For making 30 of these you need 3 eggs, 2 1/2 ounces castor sugar, 1/2 pint of thick cream, and 7 ounces of flour. Cream the eggs and sugar, then add gradually the cream and sifted flour. Heat about a pound of cooking fat in a rather small thick saucepan, when hot to just under smoking, press a tablespoon of the cake mixture through an icing pump or a funnel made of greaseproof paper into the fat, moving the funnel about as you do to shape a round perforated cake. The effect should be rather as if a long piece of spaghetti had been curled round and round to form a cake. When the "struva" is browned on one side turn it over with a slice [utensil] and brown the other side. Drain on kitchen paper and sprinkle with sugar.
