Stuet Spinat-(spinach in cream)

1 1/2 pounds spinach
2 tsp salt
1/2 C boiling water
2 1/2 T butter
2 T +1 tsp flour
1/3 C spinach water
3/4 C cream
1/8 tsp pepper
1 tsp sugarRecipe
Cook spinach in salted water until soft. Drain and reserve water. Squeeze spinach dry. Chop spinach very fine.
Melt butter, add flour and add the 1/3 cup spinach water with the cream, slowly, stirring. Add the spinach to this sauce and adjust seasonings. Serve hot.
This may also be used as filling for pancakes. Serves 4.
