1/2 cup dry breadcrumbs
3 cups milk
2 egg
1 medium onion, grated
1 pound finely minced beef
1/4 pound suet
3 ounces minced raw bacon
2 teaspoons salt
1/2 teaspoon pepper
4 large onions or small celeriac
Recipe
Make Beef Forcemeat by combining the breadcrumbs, milk and eggs and let stand 15 minutes.
Peel and chop the onion and fry golden brown. Combine with the breadcrumb mixture.
Grind the beef, suet and bacon together several times.
Add the breadcrumb mixture, salt,and pepper, and work with a wooden spoon until it becomes quite smooth and holds together.
Boil the onions or celeriac until they are half done. Drain and hollow out the centers. Fill up with the forcemeat, replace the tops, and for onions, place them in a large, thick saucepan with fat and fry until they are tender and meat is cooked through.
Celeriac, Add a little hot stock to the pan and simmer until done, and serve with the stock slightly thickened for a gravy.
You might not use all of the meat. Make patties to fry at another time or roll up in dough for pigs in a blanket, Or use phyllo dough ,etc....
